I make this side dish quite often. It's one of my and Dave's favorites. Kids, not so much. Lol!! The cheese and garlic, at least in my opinion, make all the difference. Enjoy!
Ingredients:
6 c. cauliflower florets
1-2 T. olive oil
½ c. shredded Parmesan cheese (or Kraft Parm)
¼ c. butter
2 cloves garlic, minced
Salt and pepper to taste
Directions:
Preheat oven to 450 degrees
Place cauliflower on a baking sheet
Drizzle with olive oil; sprinkle with salt and pepper; toss to coat the florets
Roast florets 20 minutes
Stir in butter, cheese, and garlic; toss to incorporate; roast another 3 to 5 minutes, until cheese is melted
